Banana ‘Energy’ Scones
These scones work really well for hungry kids in need of some extra energy which the b vitamins and potassium in the bananas provides them with.
They are easy to make, so even the less skilled cook can make them. You don’t have to add the spices, if all you have in your cupboard are eggs, bananas and milk, then you can make these. The added nuts are a bonus because they provide them with the extra energy through the protein in the nuts, so it will sustain their appetite for longer. If you have a child that does not like nuts, use ground nuts, or blend them finely, and they won’t know they are in there.
They are also good for adults as well.
Banana ‘Energy’ Scones
Makes approx. 8 scones
Ingredients
3 cups SR flour
½ cup cold butter
¼ teaspoon Himalayan salt
1 egg
1 tablespoon honey or maple syrup
½ cup chopped walnuts (or other nuts)
2 tablespoons mixed seeds
½ cup oat milk or cows milk
¾ cup mashed banana
1 tsp cinnamon (opt)
a little freshly grated nutmeg (opt)
a little milk (oats or cows milk for brushing)
Method
1. Preheat your oven to 180 degrees and grease a baking tray, put to one side
2. Chop up your butter into small pieces and run the butter into the flour in a large mixing bowl.
3. Once all the butter has been rubbed in, add all the other ingredients to the mixing ball and mix well so that all the ingredients are blended together, being careful not to overmix.
4. Make small rounds with the mixture in your hands and place the rounds on the greased baking tray, making sure to leave enough space between each scone.
5. Using a pastry brush, brush a little milk on top of the scones.
6. Place in the oven for approx. 15-20 minutes until golden brown.
These work well on their own with nothing else added, or add butter or a little cheese.
