Tomatoes are everywhere at the moment, or perhaps I notice them more because I am growing them. I have them in my greenhouse, in my garden and in my kitchen. The trouble is I can’t stop eating them!
Tomatoes are packed with beneficial vitamins and minerals to enhance your mood. They contain Folate, magnesium, iron, tryptophan and vitamin B6, these help to make mood regulating neurotransmitters- dopamine, serotonin and norepinephrine, which all enhance our mood.
In the Journal of Affective Disorders a group of researchers from Japan and China looked at the dietary habits of 986 Japanese men and women of 70 years and older. The study found that by increasing tomatoes in the diet there was decrease in depression symptoms.
There are plenty of recipes that use tomatoes either as a main dish, a base or as a side dish.
