Sticky Coconut, Honey, Nuts and Seeds
I think this is a great little protein filled snack, especially if you fancy a change from plain nuts. These are great to stop a craving and good as a late morning or late afternoon snack to pick your energy levels up. These can be done the day before or the same day and take them to work with you or eat them at home when you fancy a nibble. If you want to eat these over a few days, you will need to double or triple the recipe, as this is for 1 serving.
Ingredients- Serves 1
• 2 tablespoons seeds (I used mixed seeds with Goji berries)
• 1 heaped tablespoon nuts (almonds, cashews, walnuts, or any nut that you prefer, mixed nuts are best so you can benefit from the different vitamins in the different types of nut)
• 1 teaspoon desiccated coconut
• ½ teaspoon olive oil coconut oil
• ¼ teaspoon cinnamon
• 1tsp honey (I used local Jersey honey)
Method
Preheat the oven to 180 Celsius/gas mark 4
• Simply mix all the ingredients together and place in the oven on a baking tray
• Cook for approx. 7 Mins
Allow to cool and enjoy
